Team Descriptions and Rules:


Cook-Off Categories

Teams may enter one, two, or all three categories at no additional cost:

  • Chili
  • Baby Back Ribs
  • Jackpot – Anything goes except desserts and drinks. Brisket is allowed.

Team Registration

  • Team fees vary based on selected space size.
  • Registration includes six (6) team members. Sponsors may receive additional team members per their package.
  • Team entry includes six (6) event t-shirts (pickup at registration).

Food & Safety Requirements

  • No glass containers and no crawfish. This rule will be strictly enforced.
  • All teams must follow temporary food handling requirements including hand washing station.
  • Health permits are required and will be provided by event coordinators on event day.
  • Only registered teams with permits may cook in the Chili Slam area.
  • Teams must bring their own serving supplies (cups, plates, utensils, napkins).
  • Teams are responsible for their own condiments and garnishes.
  • Please plan to prepare food for 50+ people, plus judges.
  • Compostable serving supplies are encouraged; compost bins will be available.

Setup & Equipment Rules

  • Teams may select their space; sponsors receive preferred placement.
  • Each space includes one (1) table. No additional tables provided.
  • Bring your own chairs.
  • Teams must provide their own canopy tent (optional).
  • No games or equipment outside of your designated area.
  • Electricity provided (up to 15 amps per space). Teams must bring extension cords.
  • No generators allowed (except event-provided).
  • No outside music; event DJ only.
  • Loading/unloading only in cook-off area. No vehicles or scooters allowed.

Arrival & Load-In

  • BBQ pits: 7:15 AM
  • All other teams: 8:30 AM
  • All teams must be onsite by 10:00 AM to compete.
  • Optional pit drop-off available Thursday from 10:00 AM – 4:00 PM (secured overnight).

Judging & Turn-In Times

Judging criteria: aroma, color, consistency, tenderness, taste, and aftertaste
(1–10 scale per category)

Turn-In Times (Strict):

  • Chili: 2:00 PM
  • Jackpot: 3:00 PM (includes 20% presentation score)
  • Ribs: 4:00 PM

Entries must be delivered within 15 minutes of turn-in time or will be disqualified.


Awards & Conduct

  • Winners announced by 5:00 PM using secret numbers only.
  • Tear down may not begin until 5:30 PM (early tear down = disqualification).
  • Team leaders are responsible for team conduct. Unprofessional behavior may result in removal and disqualification.
